Production Manager (Sous Chef) - Unity College

Job Description:
The Production Manager manages all aspects of kitchen operations at Wyman Commons at Unity College. The Production Manager works with the Assistant Director of Dining to plan menus, and is responsible for ensuring safe, efficient, healthy, and sustainable food preparation and serving. Within the framework of functional leadership, the Production Manager supports and is supported by other members of the Sustainability work unity and works with all constituencies to realize the Unity College Mission and Strategic Plan. The Production Manager reports to the Assistant Director of Dining. Specific duties include (but are not all inclusive):
Assist the Assistant Director of Dining in developing, recommending and implementing the annual budget.
Supervises kitchen production, organization, sanitation, and safety, with attention to laws and regulations.
Maintains production records and daily delegation sheets, staff and student schedules, production sheets, cleaning lists, kitchen charts, and submits all forms and reports required weekly.
Schedules and leads daily line meetings.
Trains staff and ensures accountability regarding the point of sale system and cash management.
Monitors, manages, and continuously improves the sanitation, functionality and overall eye appeal of the dining area.
Ensures the sanitation, functionality and overall eye appeal of the serving and dining areas.
Works with Assistant Director of Dining in menu planning for daily meals.
Assists with computer menus and creates menu tags. Ensures recipes are followed accurately and consistently.
Prepares ingredients and meals for specific weekly meals according to recipes.
Monitors and manages production of leftover food to minimize waste.
Prepares weekly orders of food and beverages for supervisor approval.
Ensures inventory control measures are uniformly applied.
Trains staff and work-study students in food handling, preparation, sanitation, and customer relations.
The successful candidate will have a High School diploma and wither five or more years of experience in food service, including supervisory responsibilities, or an equivalent combination of training and experience. Associates degree and/or culinary training preferred. Food service management experience in a College or University setting preferred. Proven supervisory experience: ability to supervise 7-10 full or part time employees including work-study students. Cash management/reporting and inventory control accountability. Ability to work with and follow established budgets. Serve-safe Certification; or must be obtained within six months of hire.
Additional Information:
This position is on a rotating schedule that includes daytime, evening, night, and weekend shifts, and extended hours required as needed. Must be flexible and cooperative in fulfilling responsibilities and in meeting the college's needs. Must be of legal age to sell/monitor sale of alcoholic beverages. Valid driver's license with a good driving record required. The employee must be able to lift and/or move up to fifty (50) pounds.

The check can be for multiple reasons such as signing bonus, supplies, etc. The victim will be instructed to deposit the check and use the money for any of these reasons and then instructed to send the remaining funds to the fraudster. The check will bounce and the victim is left responsible.
